Even though the title says the puzzle is Not Wordle, we should first consider the grid as a Wordle puzzle, where the green letters are all accurate, and only the middle rows' gray and yellow letters are accurate. PENTOMINOUS fits these criteria, and it is a logic puzzle genre.
Now, we just need to solve the logic puzzle. Here is a video walkthrough, and the solved grid (presented with all the colors, and with only the extraction) is below:
Now the flavortext "I.....I.....I....." becomes relevant. There are exactly three I pentominoes in the puzzle (the long vertical regions). Reading each one, and taking the topmost I pentomino first, we get "TEQUI", "LACOC", and "KTAIL". Thus the answer is TEQUILA COCKTAIL.
